KJOLLE RESTAURANT – PERU
A bit over thirty years old, talented, creative, strong. Her passion for cooking begins at a very young age, when she starts to work with her mother in the catering industry. Then, a flight to Europe where she can experience and experiment. Impossible not to mention the Cellar de Can Roca. But Lima gave her the chance to blossom. Begun as a commis of the ‘’Central’’. It took her three years to become sous chef, alongside with Virgilio Martinez who later became his life partner. A kitchen made of research and biodiversity, with unique ingredients that can hardly be found – and tasted – somewhere else.
In 2018 she opens the Kjolle, a complementary format to Central, with a softer and more informal approach in the expression of Peruvian products and traditional culture. It is a success, at the Latin America’s 50 Best Restaurants award ceremony last year she won the title of Best woman’s chef. She is a reference point for South American and international gastronomy, her cuisine is guided by the colors and flavors and is colorful and joyful, just like her.
