Viviana Varese is opening the kitchen of her VIVA to the most prestigious chefs in the world, a journey of shared ideas and interconnected creative stimuli. A guest chef will guide the VIVA brigade and immerse him or herself in the colour and energy of this space. And to finish, a touch from Viviana herself, her VIVO dessert.
Front of house, Viviana has entrusted the choice of wines to Giuseppe Vaccarini. A name that needs no introductions: Vaccarini is the greatest living Italian sommelier, he was won the Best Sommelier in the World A.S.I. award and teaches and collaborates with many Italian and international universities on gastronomy, enology and the profession of sommelier. Author of books and consultant to many companies, in 2007 he founded and manages the Associazione della Sommellerie Professionale Italiana, of which he is still the president.
Eight evenings already planned, starting mid October and a calendar full of exceptional appointments throughout 2020. Eight unmissable events, a truly unique experience.
The season starts on October 27th with Tim Butler and his Thai cuisine, to continue with Adeline Grattard and her French-Chinese menu in November. The culinary journey goes on into 2020 with French cuisine by Iñaki Aizpitarte, vegetarian cuisine by Amanda Cohen and the Peruvian and Colombian ones by Pía Léon and Leonor Espinosa. Mauro Colagreco, Chef No.1 in the world awarded at the World’s 50 Best 2019, and Mitsuharu Tsumura – Nikkei kitchen – will be closing this incredible experience next Summer.
INCREDIBLE VIVA was conceived in a meeting between Viviana Varese – Michelin starred chef – and Anna Morelli – editor of Cook_inc and well known globetrotter.
A friendship based on a powerful shared passion: the hunt for quality, ethics, originality and sincerity in cuisine, haute cuisine.
